Food has a way of bringing people together, whether it’s around a dining table or a kitchen counter. In the spirit of connection, Hola Cultura collaborated with GreenRoots Teaching Kitchen and its coordinator Jojo Emerson to make Mexican street corn salad, a twist on a beloved snack eaten throughout Mexico. This dish is meant to be enjoyed by many and blends colorful produce and smoky flavors, creating a vibrant taste with each bite.
Mexican street corn is one of the many recipes that GreenRoots Teaching Kitchen has perfected. As an environmental justice organization, GreenRoots provides a variety of community resources, including free cooking and nutrition classes.
“We built out the teaching kitchen to be a space for folks to come together to not only share recipes, but build community,” Emerson told our team when we met to cook this recipe together.

Mexican Street Corn Salad
Ingredients
2 tablespoons of vegetable oil
4 ears of fresh corn, shucked and kernels removed
Salt to taste
1/2 cup of scallions, thinly sliced, green parts only
1/2 cup of fresh cilantro, finely chopped
1 Jalapeño, seeded, stemmed and finely chopped
1 to 2 garlic cloves, minced
2 tablespoons of mayonnaise
1 tablespoon of lime juice
Chile powder or hot chile flakes to taste
Directions
Heat oil in a large skillet over high heat until shimmering. Add corn kernels and season with salt. Toss once or twice and then cook for about 2 minutes without stirring.
Once the corn is charred on one side, toss and stir until charred on the other side. Continue tossing until the corn is charred all over, then transfer to a large bowl.
Add cheese, scallions, cilantro, jalapeño, garlic, mayonnaise, lime juice and chile powder to the bowl.
Stir to combine and add more chili powder or salt to taste.
Serve immediately and enjoy!

Tips
Don’t let those leftover corn cobs go to waste! Add them to a freezer bag with other veggie scraps and bones, and save them for the next time you make homemade stock.
Corn cobs can deliver a nutty taste to any pudding or dessert. Simmer them in milk and savor the rich flavors.
